Chalet chef to the stars

Wayne Hawxby, one of Supertravel's most charismatic chalet hosts is no stranger to cooking for celebrities

Chalet chef to the stars Wayne Hawxby Wayne Hawxby, one of Supertravel's most charismatic chalet hosts Wayne Hawxby has won a reputation as one of Supertravel’s most charismatic chalet hosts

Wayne Hawxby has won a reputation as one of Supertravel’s most charismatic chalet hosts. And while he may not yet have attained the status of celebrity chef – popular though he is with Supertravel guests – he has definitely made the role of host to the celebrities his own.

Wayne makes sure that he treats all his guests as VIPs – so all he had to do was carry on as normal when Boris Johnson and Caprice arrived for a ski holiday. We should point out here that they were guests at separate times.

Supermodel Caprice arrived with then partner John Hitchcox – a billionaire property developer – and his children and nanny. ‘She was easy going and lovely,’ said Wayne. ‘She had a very hectic schedule and had a photo shoot with a glossy magazine during the week – but they still managed to get out skiing quite a bit.

‘She used to come into the kitchen for a chat and to see what

was being prepared for dinner. She was very chatty and always looked very glamorous. They did have a few après ski drinks in the village but in the evening they would just chill out in the chalet and curl up and watch a DVD.’

THE TASTE TEST

Keen skier Boris Johnson was out on the slopes as much as possible, said Wayne. He visited before he was Mayor of London and he was on holiday with his wife and two children and his sister, journalist Rachel Johnson.

‘Boris was out skiing every day,’ said Wayne. ‘The family were very nice to host, and they just wanted to switch off and chill out. After dinner they spent most evenings relaxing and having a drink in the chalet. Most people do - my main aim is to make it feel like home from home, so guests can completely unwind.’ Wayne, 32, has had several exciting career assignments as a private chef in

stately homes and private villas, where he catered for very specific tastes in high end dining.

Even working in the restaurants of a 1,600 - passenger luxury cruise ship has figured in his culinary odyssey. Now one of Supertravel’s longest-serving chefs, he has worked for the company in a number of resorts across the Alps.

Originally from Co.Durham, he studied catering and hotel management straight after school – and was introduced to skiing at 18. So, after working in hotels in Surrey and London, a career in the mountains seemed the natural progression. He has just finished his fifth winter season at Chalet Seeberger in St Anton – where his welcome speeches and nightly explanations of the menu, always ended with ‘free-flowing wine’, have become legendary among Supertravel regulars.
