Spike the skiing chef has a theory – that preparing menus for a mountain chalet full of hungry winter sports holidaymakers is much the same as skiing the slopes themselves.

     You can sometimes keep to the marked pistes with something delicious and familiar – or occasionally venture off-piste with surprising and delightful variations.

     Supertravel chef Spike, real name Simon Berta, has cooked for fine dining establishments and run large catering organisations – and his guests are benefitting hugely from his wide experience, expertise and confidence in the kitchen.‘I use a mixture of my own dishes and those in the company cookbook,’ he said. ‘I’m delighted that I’m given the leeway and flexibility to stamp my own mark and creative talents and personality on recipes. ‘This means I can be very imaginative and make the most of whatever looks best to me in the shops on any particular day. And the shops in St Anton are good with a wide range of food.

     ‘At Supertravel we like to make dinner the absolute highlight of the day for guests and I love to come up with new ideas.’ Many of these quickly find their way to his Facebook site, and his recipes are a big attraction to his Facebook friends and cooking colleagues.

 

‘I’m quite proud to say that many of my recipes have found their way into other chalets around the Alps,’ he said. Spike, 34, has vast experience as a chef and catering and hospitality manager – but it all began ‘because I have to say that my mother was not much of a cook.’ She was happy to let him take over cooking responsibilities for the family at a tender age - and that set him on a career in kitchens all over the world. By 18 he was head chef at an Italian restaurant in London and by 19 the general manager.

     There followed senior chef and management jobs with restaurants in England, often supervising large teams. But the mountains, and skiing, has proved the big draw for Spike and he says he fell in love with St Anton the moment he arrived.

ST ANTON IS PERFECT

     ‘I decided that working in a great company operating high end chalets would give me the perfect opportunity to cook fantastic food and get out on the mountain too. And St Anton has the perfect mix of mountains, skiing and atmosphere.

     And what about these Facebook recipes? ‘Well, I hate food snobbery,’ said Spike. ‘I’m a big fan of Jamie Oliver, and love to

 

search out the freshest local produce for delicious and attractive dishes – and they have to be filling too for hungry skiers and boarders. I like to try different things and mix things up. And if I can persuade people to happily try slightly different things, I love it. People do get stuck in their ways.

     ‘We’ll gladly meet any special dietary requirements, common ones these days being gluten-free or no red meat, or try to get whatever people fancy – but sometimes people are even reluctant to try a cheese they don’t know out here in Austria. Some are horrified if they don’t see cheddar on the cheese board – so actually, I always have some tucked away in the fridge in case people ask.

     Spike did have one big confession to make though – some of his best-loved creations came about entirely by chance.‘One Christmas, our suppliers didn’t deliver our turkey that we had ordered. Determined to give our guests a proper Christmas meal, I ran to every shop in town until I found some turkey fillets, filled them with walnut stuffing and wrapped them in bacon. Thinking this was the dish I had intended to serve, the guests loved it. Inspired by this recipe, my stuffed chicken and bacon roulade is now my most popular dish!’
