French nobility in modern-day Miami sounds like a terrible sitcom, but luxury beachside hotel SLS South Beach has all the pomp of a 17th-century château, translated into Floridian folly by Gallic designer Philippe Starck.

Hotel Facilities:

  • Run by a bevy of beautiful bar staff, lavish Hyde Beach club draws a sun-kissed crowd for poolside partying, dancing on the sand, DJ sets and cool cocktails. If your wallet’s stashed with scads of money opt for a champagne spray package (from $1,000 for four bottles) to kick off the debauchery in explosive style. Revellers are welcome seven days a week till late; when guests aren’t dancing to turntable-spun beats, games, brunches and pop-up tasting events are held in the expansive space. Bar Centro is a little more demure, but no less exciting – chef José Andrés’ cocktail list contains salt-air-infused and liquid-nitrogen-chilled libations, and a reinvented G ’n’ T.
  • In Bazaar restaurant, chef José Andrés plunders his Spanish heritage to compile a menu celebrating Latin cuisine from past and present, comprised of tapas plates and authentic ham and cheese platters. The Miami Meets the World menu is a little more adventurous, with steamed buns, dragon-fruit ceviche and coffee-rubbed churrasco. Katsuya – dramatically dressed in scarlet and white by Starck – serves up miso-glazed, ponzu-slathered dishes, wagyu steaks and sushi and sashimi. Take breakfast or lunch at the Terrace, a European-style café showcasing Andrés’ innovative flair: we like the signature dish, the olive-oil pancakes. 
  • The Bazaar is open from 6pm–11pm, Katsuya from 7pm–11pm (both open till midnight on Fridays and Saturdays). Hyde Beach opens from 11am by day, its night-owl hours are 10pm–2am. Bar Centro runs dry at 1.30am. Breakfast on the Terrace from 6.30am–12 noon.
